Ingredients:
- 2tbsp olive oil
- a medium red onion, finely chopped
- a small carrot, finely chopped
- 2 garlic cloves, minced
- 1 can of diced tomatoes
- 1.5 cups of cooked black beans
- 1/2 cup water
- 1/4 tsp cayenne pepper
- 1.5 tbsp chili powder
- salt
Directions:
- heat olive oil in large skillet
- add onion, carrot, garlic
- simmer for 7 minutes, covered
- in a pot, mix veggies, beans, water and tomatoes
- add cayenne pepper, chili powder and salt
- let cook for 10 minutes
- check spices, serve over rice or alone
